This recipe is everything that’s right in the world as far as I’m concerned. I LOVE cilantro. And garlic. And shrimp. Sprinkle a little lime in and I could seriously eat this every day. True story. Since Husband doesn’t like seafood (in my defense, I didn’t know this before I fell for him- who doesn’t like seafood???), I’m using this deployment as an excuse to eat seafood at every opportunity. This is an incredibly easy, light, and downright delicious recipe that deserves to make its way into your week. The original recipe from Fit and Fab for Life called for this to be served with green beans, but I could easily see this going great over salad too…or you could just eat a huge bowl of it by itself. I can personally attest to the awesomeness of this idea.
- 2 tsp olive oil
- 2 lb shrimp, shelled and deviened
- 6 cloves garlic, crushed
- 1/3 cup chopped fresh cilantro
- 1 lime
- salt and pepper
Directions: Heat a large frying pan on medium-high heat. Add oil to the pan, when hot add shrimp. Season with salt and pepper. When the shrimp is cooked on one side, about 2 minutes, turn over and add garlic. Saute another minute or two until shrimp is cooked, careful not to overcook. Remove from heat. Squeeze lime all over shrimp and toss with cilantro. Serve hot.
